Simply put, kombucha is a beverage that is made by fermenting black or green tea.
Kombucha is made by adding a "mother" or beneficial symbiotic colony of bacteria and yeast (SCOBY) to tea, water and sugar. In the right conditions, the SCOBY will ferment the tea.
Our kombucha undergoes two steps: primary and secondary fermentation. During primary fermentation (about 14 days), the tea remains in direct contact with the SCOBY. The SCOBY gets to work metabolizing the sugars, generating beneficial acids, bacterias and yeasts in the process. During secondary fermentation, the kombucha is bottled and left to ferment for another 7-14 days. This sealed environment allows for anaerobic fermentation to take place, which forms a slight effervescence.
Throughout both fermentation processes, the SCOBY relies on digesting the sugar and caffeine to do its job. The end result is a refreshing elixir that is left with very little caffeine and sugar, making it an excellent alternative to conventional sodas.
