WHAT IS KOMBUCHA ANYWAYS?

Simply put, kombucha is a beverage that is made by fermenting black or green tea.

Kombucha is made by adding a "mother" or beneficial symbiotic colony of bacteria and yeast (SCOBY) to tea, water and sugar. In the right conditions, the SCOBY will ferment the tea.

Our kombucha undergoes two steps: primary and secondary fermentation. During primary fermentation (about 14 days), the tea remains in direct contact with the SCOBY. The SCOBY gets to work metabolizing the sugars, generating beneficial acids, bacterias and yeasts in the process. During secondary fermentation, the kombucha is bottled and left to ferment for another 7-14 days. This sealed environment allows for anaerobic fermentation to take place, which forms a slight effervescence.

Throughout both fermentation processes, the SCOBY relies on digesting the sugar and caffeine to do its job. The end result is a refreshing elixir that is left with very little caffeine and sugar, making it an excellent alternative to conventional sodas.

At Culture, we are committed to only using the highest grade fair-trade teas, purified water, organic cane sugar and organic produce.

WHAT ARE THE BENEFITS?

Kombucha is a nutritionally alive functional beverage that contains healthy organic acids, antioxidants, enzymes, amino acids and B vitamins. All of these factors have the potential to help boost energy, detoxification, mood and immunity. 

One of the major benefits of drinking kombucha is that it can aid in re-populating your gut with beneficial baceteria (which are heavily depleted from stress, toxins and poor-quality diet). Improving beneficial bacteria helps to create a more powerful digestive response. Our digestive tract and our brain have an intimate connection through the mind-body-gut connection. When it comes to overall well-being, the health of our gut is paramount.

Antioxidants are another key benefit of kombucha. The tea itself is loaded with antioxidants and the added organic herbs, flowers and fruit add another layer.

Kombucha is an excellent alternative to regular soda. It's 100% natural, much lower in sugar, lower in caffeine and is free of the chemicals often found in big brand beverages, 

Not only that, it tastes good. And what tastes delicious, AND is beneficial to you your body, is the ultimate soul nourishment.

FOUNDER + OWNER

Dan was born and raised in Richmond, BC. The son of a local chef and culinary instructor, his passion for making delicious "potions" sprouted at the ripe young age of 3. 

In 2013, after working as a chef for over a decade himself, Dan decided to put his passion for food and drink towards his own venture, Culture Craft Kombucha. 

Dan is hands-on every step of the way, from recipe creation, to brewing, to bottling. His favourite part of the business is sourcing BC organic produce to elevate the flavour of each brew, all while supporting our local food systems.

Symbiotic Colony Of Bacteria and Yeast. That's SCOBY to you. 24/7, 365 her and her dedicated crew work hard to eat the sugar from the brew, creating a slight, natural effervescence in the process

Her main job isn't just to turn the tea into something tasty, but a beverage that is loaded with organic acids, nutrients and probiotics that can boost your energy and digestion.

She's the hardest working person in the company (we offered to pay her and her team more, but she said all they wanted was sugar and the right conditions to do their work). Fine by us!

BRITT LAINE

RIGHT HAND WO-MAN

Britt is a third generation North Vancouverite, who is passionate about holistic nutrition and the psychology of our relationship with food.

A foodie and restaurant industry vet herself, she has a deep love for how all beverages, alcoholic or non-alcoholic, can elevate an eating experience.

Although passionate about pairing delicious food with alcoholic beverages, her background in natural health, paved way for the desire to share a non-alcoholic drink that has the ability to enhance any meal AND that has great health benefits.
